One of the symbols of Made in Italy gastronomy, Parmigiano Reggiano is a cooked, hard parmesan cheese made from partially skimmed cow's milk (by natural separation) and is classified under the protected designation of origin (PDO) category.
Parmigiano-Reggiano is an Italian hard, granular cheese produced from cow's milk and aged at least 12 months. It is named after the producing areas, the provinces of Parma, Reggio Emilia, the part of Bologna west of the Reno, and Modena; and the part of Mantua on the right/south bank of the Po.
Parmesan cheese has a hard, gritty texture and is fruity and nutty in taste, and it is mostly consumed grated over pastas or used in soups and risottos although it can also be eaten on its own as a snack
