Montasio creamy aged cheese


Montasio Mitica® DOP or simply Montasio is a creamy, unpasteurised cow’s milk cheese originating from the Friuli Venezia Giulia and Veneto provinces of Italy. It was originally a monastery cheese but today it is produced only in a specific region of Italy following age-old traditional methods.

This DOP (PDO) cheese is aged about 4-6 months and has inedible rind. It is pale yellow in colour with mellow flavour.

When the cheese is fresh, the taste is mild and delicate, and the color is white. The texture is compact with an even oscillation, and the rind is smooth and flexible. As the cheese matures, it becomes grainy and crumbly, and the rind dries and darkens.

The cheese goes well with Sauvignon Blanc.
